Alton Brown presents his sumptuous ‘Grilled Grilled Cheese’ [Video]

Alton Brown, the lovable and knowledgable food geek and resident cuisine geek, doesn't seem too impressed with the current state of the grilled cheese sandwich. Thankfully, he has decided to share his own recipe for what he refers to as Grilled Grilled Cheese. You see, it's a sandwich cooked on the grill, and the recipe actually involves grilling the freaking cheese.
That’s because whenever and wherever people say they’re gonna make you a grilled cheese sandwich what they really mean is there gonna make you a griddled sandwich containing some melted cheese. Well not me. Now when I say grilled cheese sandwich, I mean a grilled sandwich containing grilled cheese and here’s how I do it.

We’re less than a week out from Father’s day, and I can smell the charcoal already. While some may head out to a nice steakhouse for a special dinner for Dad, tons of us will be gathered around a grill doing it ourselves. Chimichurri Sauce Recipe

How’s the weather, everyone? Summer made its debut in my neighborhood over the weekend, which means one thing: GRILLING. And lots of it. And one of the very best condiments for a nicely grilled piece of meat is definitely chimichurri. Originating in Argentina, chimichurri is a vibrantly hued sauce that is packed full of flavor, and as a bonus in the warm weather, it doesn’t require an iota of heat to make!
Ingredients:
- 2 garlic cloves, peeled
- 3/4 teaspoon dried crushed red pepper
- 1 cup (packed) fresh Italian (flat leaf) parsley
- 1/4 cup (packed) fresh cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
Preparation:
In a food processor, chop the garlic. Add the red pepper, parsley and cilantro and process until the herbs are finely chopped. Add the cumin, salt, olive oil and vinegar. Pulse until the mixture has emulsified and the sauce is bright green. Serve immediately on whatever you just took off the grill.

Beans and rice, rice and beans. Endorsed by scores of nations worldwide, beans and rice provides a balance of protein and carbs that can hardly be beat (not to mention the combination creates a very thrifty meal). Add some chicken for an extra protein bump and some salsa for flavor, and you have a dinner that’s quick, healthy and delish.

Chicken Caesar Salad Wrap Recipe

This is a great one for summer time cooking when it’s hot and all you can think about it staying away from the hot oven, and yet you still have to feed your family. The best way to prepare this recipe is to cook the chicken ahead of time before it gets hot!
CHICKEN CAESAR SALAD WRAP
Makes 4 Wraps
Ingredients:
- 2 Chicken breasts, cubed and grilled or fried
- 2 Heads Romaine lettuce, chopped
- Johnny’s Caesar Dressing
- 1 cup fresh grated Parmesan cheese
- Dash of pepper
- 4 flour tortillas, whole wheat, spinach, plain, mulitgrain, you choose!
Directions:
- Cook the chicken however you desire and set aside to cool.
- Toss together chopped lettuce, dressing, pepper, and cheese. Add chicken to the lettuce mixture and stir lightly.
- Warm tortillas and serve up the wraps at the table as the warmth from the tortilla will cause the lettuce to wilt if left to sit. Enjoy!
For some variety you can mix things up a bit. The other night we made the wraps with spinach and blue cheese dressing. Be creative, you can put any kind of salad in a wrap to add a little excitement to your salad! Try BBQ sauce on your chicken without dressing on the salad just use extra BBQ sauce. Hey McDonald’s is doing it, but I’m sure it’s much better homemade!
